Greek Salad

Ingredients:
• 600g tomatoes
• ½ cucumber
• 200g feta cheese
• 100g black olives
• juice from ½ lemon
• handful of basil
• 3 tablespoons extra virgin olive oil
• Salt
• Pepper

Method:
• Cut tomatoes
• Cut and deseed the cucumber
• Drain and cut the feta
• Place the tomatoes & cucumber onto the platter.
• Scatter on the feta and black olives
• Drizzle with lemon juice
• Scatter the basil over the salad
• Sprinkle with olive oil
• Season with salt and pepper

Serving suggestion:
• Great with barbecued meat
