THE ORIGINAL FAST FOOD
Pizza remains practically the only fast food in Italy, & pizza in Italy is no laughing matter. In fact, so serious are the Italians about their pizza that in May 1984 in Naples (the birthplace of true Italian pizza), all the old Napoletani pizzaiola came together to agree the true method of production.
Their conclusions were signed by the notary& posted by the Ministry of Agriculture to the EU. A schedule of 13 articles details the correct procedure for making pizza (of which apparently, there are only three true types – the Marinara, the Margherita & the Margherita Extra). Amongst other directives, the use of a rolling pin in the preparation is specifically prohibited & the pizza must be cooked in a wood-burning oven at 485oC for no less than 60 & no more than 90 seconds! Now fast food doesn’t come any faster than that.
